Last week, I posted about my favorite vegetarian meals that I make at home (if you missed it, you can read it here.). In this post, I’m excited to share another vegetarian meal that I love at one of my favorite restaurants, Zoe’s Kitchen. This restaurant also holds a special place in my heart because it was the first one I ate at with my (then) new friend, Melisa, when I moved to Raleigh.
Luckily, I’ve continued to make amazing friends here, especially through blogging. I now have a great group of blogger friends and always look forward to our dinner dates. A few weeks ago, we all met at Zoe’s Kitchen in Raleigh to enjoy a delicious Mediterranean meal.
As an appetizer, we enjoyed the hummus platter. It included three kinds of hummus (classic, basil pesto and harissa red pepper) and was served with pita bread, chips, cucumbers and bell peppers. I could have eaten the whole plate myself, but had to save room for my spinach roll ups! (I can’t even type the words without drooling)
The spinach rollups at Zoe’s Kitchen are seriously one of my favorite things to eat, ever! It’s tortilla rolled up with spinach, mozzarella, feta cheese and mushrooms. Zoe’s also has amazing side dishes, like pasta salad, rice and a really good greek salad. It always makes for a tasty meal and I love that I can eat it all guilt-free.
Of course, my girlfriends enjoyed their meals just as much as I did. It was actually Molly’s first time eating at Zoe’s Kitchen and, as expected, she was not disappointed. My fellow vegetarian, Angela, ate the grilled vegetable kabobs, which I also highly recommend. Danielle raved about their pimento cheese and even bought some to-go before we left. After we finished our entrees, we splurged on some of the desserts. I split the zesty lemon cookie, but the chocolate cake that Meghan ate looked to-die-for! (which she confirmed!)
